Lavì Grillo is a spumante Extra Dry wine.
This cuvee is the result of a careful study of the territory and from a selection of vineyards particularly suited to producing grapes with a spumante base. The altitude is between 500-600m and the soils of chalky and limestone origins can be found in the communes of Vita and Salemi. A mainly fresh climate with a good thermal excursion between night and day with excellent exposure to the sun has allowed to obtain a sparkling wine which fully reflects its territory with extremely high levels of quality.
It is straw yellow with green hues. The bouquet is intense and complex, endowed with fresh and aromatic notes. Scents of white flowers such as orange blossom and elder flower and with a citrus finish. Notes of nettle and sage leaves are perceived as well as jasmine and melon. It expresses a perfect harmony between the potential of the vine and its territory. Mineral and sapid, fresh and lively. Pairs perfectly with fish and vegetable first dishes, white meat main courses, vegetable tabbouleh and fresh dishes with mozzarella, anchovies and cherry tomatoes.
The grapes of Grillo that make up La Cuvée Vitese are hand-picked and skilfully worked according to the traditional metodo Martinotti o Charmat. In this method refermentation takes place in autoclaves at a controlled temperature of 16°C for 30 days with a permanence on the yeasts favoured by frequent Batonnage. The wine is subsequently filtered and bottled. The characteristics of this method is that all phases that follow refermentation take place in isobaric conditions.
