Resilience Grillo is a Doc Sicilia wine.

It is straw-yellow with elegant notes of yellow fleshed fruits with tropical hints. Mellow floral scents of orange blossom and citrus fruits. It has excellent sapidity and varietal identity. The balanced acidity supports the elegance on the palate. Pairs well with vegetable dishes and tasty first courses.

The vine variety is 100% Grillo. The grapes are hand-picked and placed in small baskets. They are worked quickly to maintain the unique characteristics of these grapes, respecting their territorial origin. The soft pressing guarantees the faithfulness of the scents and natural acidity of the must. Subsequently the static clarification of the must is obtained at 12°C for 24 hours and the fermentation is monitored daily to enhance the varietal characteristics. Refinement takes place in stainless steel silos for 5 months with frequent bâtonnage to maintain the noble lees in suspension and limit the use of sulphites.
