Resilience Catarratto is a Doc Sicilia wine.

It is straw-yellow with green hues and a bouquet of floral notes that range from jasmine, orange blossom and elder flower with fruity tones of grapefruit and melon. It has an unmistakable varietal bite with a marked sapidity and balanced acidity that respects the territory of origin, in height and with its calcareous soils. Pairs well with delicate Mediterranean dishes. Enhances the elegant notes of the food, and for this reason, allows traversal pairing.

The vine variety is 100% Catarratto. The grapes are hand-picked and placed in small baskets. They are worked quickly to maintain the unique characteristics of these grapes, respecting their territorial origin. The soft pressing guarantees the faithfulness of the scents and natural acidity of the must. Subsequently the static clarification of the must is obtained at 12°C for 24 hours and the fermentation is monitored daily to enhance the varietal characteristics. Refinement takes place in stainless steel silos for 5 months with frequent batonnage to maintain the noble lees in suspension and limit the use of sulphites.
