It is intense yellow straw, crystal clear, consistent. Its bouquet is intense and complex with floral notes of jasmine and other white flowers, fruity notes of yellow fleshed melon, green apple, pear, pineapple, and citrus. Fresh, savory, mineral, soft, and very pleasant on the palate. Excellent balance of acidity with a long finish. Excellent accompaniment to pastas with fish, delicate risottos, and white meats.
The variety is 100% Grillo. The grillo grapes are grown at varying elevations ranging from sea level to the highest hills in the Trapani province. Every subzone offers its own character to the final wine. The Kore line includes a selection of the best wines from our best projects. The sandy vineyards give salinity and plush mouthfeel, while the vineyards high up in the hills offer a savory character and elegant aromas. The grapes are harvested by hand and vinified in stainless steel tanks, all with the utmost attention to detail. The wine is aged on the lees for a few months and then bottled after the new year.
The grapes are destemmed and softly pressed in order to preserve the aromas and the acidity of the must. The juice is pressed off in a cool environment. The clear must ferments for 15 days under temperature control. Aged on the lees for 4 months with regular bâtonnage. Filtered only preceding bottling; this protects the wine’s aromas, an increase in elegance, and allows for low sulphite additions.
